Cyril Lignac: Crispy feta, mint and zucchini

Another recipe Cyril Lignac made for the anniversary! It can make a great entry for an upcoming dinner.




Ingredients for 20 crisps: 1 zucchini


12 mint leaves 200 gr feta cheese 1 egg


10 sheets of pastry 2 tablespoons olive oil salt and pepper


Preheat oven to 180 ° C. Cut the end of the half and grate zucchini with skin, using a coarse grater. Cut mint leaves into thin strips.

Mash feta with olive oil and egg. Add the grated zucchini and mint strips. Add salt and pepper and mix.

Cut a large square in each pastry sheet and cross the square in 2 bands. Lay one end of each strip with a spoonful of filling zucchini. Fold and roll the edges to form a roll (I brushed with egg yolk to hold them).
Place on a baking sheet and covered with parchment paper. Proceed in the same way for all other bands of brick.

Brush rolls with olive oil and bake 5-7 minutes until lightly browned.

Verdict: it's very good and not cloying. But I was not successful that the bricks are crunchy ... feta cheese has softened the blow of the foil and they were not as crisp as it should be. Maybe he should go to the grill?
