Cyril Lignac: baby spinach salad with poached eggs and mushrooms
2nd day of my week with a special Cyril Lignac simple but delicious salad ...
Ingredients 2 persons: 100 gr
spinach
2 eggs 100 g mushrooms 1 green apple
Paris
1 shallot
few chives 4 tablespoons olive oil 2 tablespoons
cider vinegar 1 teaspoon mustard
salt, pepper
Boil water and cook the eggs 5 minutes.
Combine mustard and vinegar, and salt. Then add olive oil and pepper.
Eliminate base and slice the mushrooms. Peel apples and cut into thin slices. Peel shallots and cut into small dice. Cut chives into small pieces.
In a bowl, combine spinach, mushrooms, potatoes and shallots with vinaigrette.
Divide between 2 plates. Remove the egg shells and put them on salads. Sprinkle with chives.
Verdict: salad very healthy and very tasty
